Rasgulla – A Sweet Delight from Bengal
Rasgulla, also known as Roshogolla, is one of India’s most loved desserts. Originating from Bengal, this soft, spongy sweet is made from chenna (Indian cottage cheese) soaked in sugar syrup. Each bite melts in your mouth, leaving a light, sweet flavor that brings joy to every celebration.

Ingredients You’ll Need

Step-by-Step Preparation
1. Make the Chenna (Cottage Cheese):
Boil milk in a pan. Once it starts bubbling, add lemon juice slowly while stirring. The milk will curdle and separate. Strain the mixture using a clean muslin cloth. Rinse the chenna under cold water to remove the lemon flavor. Hang it for 30 minutes to remove extra water.
2. Knead the Chenna:
Place the chenna on a plate and knead it with your palms for about 8–10 minutes until it becomes smooth and soft. Divide it into small round balls without cracks.
3. Prepare the Sugar Syrup:
In a large pot, mix sugar and water. Bring it to a boil and let the syrup become slightly sticky. Add cardamom powder for fragrance.
4. Cook the Rasgullas:
Add the chenna balls to the boiling syrup. Cover and cook on medium heat for 15–18 minutes. The balls will expand and turn soft and spongy.
5. Cool and Serve:
Turn off the heat and let the rasgullas rest in syrup for at least 2 hours. For a richer flavor, add a few drops of rose water before serving.
