Fish Soup
Here’s a simple recipe to cook a delicious and comforting fish soup:Ingredients:
- 500g (1 lb) fresh fish fillets (cod, haddock, or tilapia)
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 medium tomatoes, diced
- 1 carrot, thinly sliced
- 1 celery stalk, chopped
- 4 cups fish or vegetable stock
- 1/2 tsp paprika
- 1/2 tsp dried thyme or oregano
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions:
Prepare the base:
Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.
Add the vegetables:
Add tomatoes, carrots, and celery. Cook for 3-4 minutes, stirring occasionally.
Add the stock and spices:
Pour in the fish or vegetable stock. Add paprika, thyme, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
Add the fish:
Cut the fish fillets into bite-sized pieces and gently add them to the pot. Simmer for another 5-7 minutes until the fish is cooked through and flakes easily.
Finish with lemon juice:
Stir in the lemon juice for a fresh and tangy flavor.
Serve:
Ladle the soup into bowls, garnish with fresh parsley, and serve hot with crusty bread.
